This method has been used in royal Mughlai kitchens for centuries, and we have preserved it exactly as it was meant to be.

Here is something most restaurants will not tell you: the water you cook with affects the taste. We use mineral water in all our cooking — from washing the rice to preparing the gravy. It is a small detail that makes a significant difference in the final flavour.
